Last Minute Thanksgiving Ideas for Vegetarians
Happy Thanksgiving Week! Have you planned your menu and braved the trip to the grocery store? If so congrats! If not I’m here to help. I wanted to share a few Thanksgiving ideas for vegetarians and vegans to help take the stress out of the holiday. Holidays should not be stressful. They should be extra time in your life to spend time with friends and family. So many traditional Thanksgiving foods can easily be make veggie friendly. Focus on side dishes In my opinion you can never have too many sides but for a typical holiday meal you should serve: at least two veggie dishes, stuffing, potatoes (mashed, sweet, scalloped?…

Running & Hiking Books Spring 2018
If you like to hike or trail run you will be really excited to hear about three new books that all go on sale April 10th. Two of the books focus on the AT (Appalachian Trail). The AT is a 2,189 mile trail that runs up the east coast from Georgia to Maine. It is longest hiking only footpath in the world. I managed to get my hands on an advanced readers copy of the first book a few days before our recent road trip up to Tennessee so of course I took it with me to read on our trip. It seemed very fitting since part of the AT runs through…

Road Trip Snack Ideas For Vegans
No road trip is complete without snacks. Some snacks are healthier than others but lets face it I love vegan junk food. The junkier the better. I try to snack healthier (carrot sticks, fruit, nuts, roasted chickpeas) when I am at work but when I am on vacation I tend to go a little crazy. I like to stock up on a few of my favorite vegan snacks before any road trip. It’s cheaper and it cuts down on drive time if we are making less stops for food along the way. It’s super easy to do. I just throw all my snacks into one tote bag to help me stay…

Vegan Friendly Easter Basket
We don’t normally do a lot for Easter. My husband, Eric, is a little afraid of the Easter Bunny. When he was growing up his mom told him the Easter Bunny would leave treats for him in his shoes. The idea of a giant rabbit coming into his bedroom while he was sleeping freaked him out a little bit so he would line up all his shoes in the hallway and shut his bedroom door. So that’s why we don’t normally do a lot for Easter. If we do anything it is usually just baskets for the cats. Have you ever watched a cat nose around an Easter basket for…

Fruit and Chocolate Board
Have you seen these amazing vegan charcuterie platers and appetizer trays and wondered how anyone could put them together? It can seem overwhelming but it’s something anyone can do. It’s just about filling the space and trying to balance foods. For this board I chose to limit myself to fruits, nuts, and chocolate for a sweet paring. By limiting myself to this theme I am already making my tray more cohesive. Start with the one thing you really want to shine and build the board around that. I wanted to use this vegan fig salami that I just bought online. It is from Hellenic Farms. It’s naturally sweet but the…

Brunch at Plant in Miami
I spent the long weekend in South Florida. It was just a quick solo trip to visit family and friends but it was so nice to escape to a warmer climate for a few days. Sunday we went to brunch at a mostly raw plant-based vegan restaurant called Plant in the Wynwood neighborhood of Miami. The restaurant is in an unbelievable location. The Wynwood district is so vibrant and colorful it’s walls are covered in murals but Plant is tucked away in a tranquil urban garden called The Sacred Space. The weather was perfect so we were able to sit outside by the reflecting pool and soak in the sunny…

Winter Solstice
Happy Winter Solstice! Winter Solstice is a time of rebirth so I am using this time for simple reflection. The holiday season can be so hectic and stressful sometimes you need to take a mini break to take a deep breath and relax. I am hoping that looking at these peaceful images will provide me with a moment of zen while I am at the airport tomorrow. The thought of traveling on Christmas weekend is freaking me out a bit. I have a quick overnight work trip to Dallas so I will fly out tomorrow morning and fly back home the next day. I hope the airport is not too…
