Vegan Jicama Slaw
Vegan Jicama Slaw is a light and refreshing side. It also makes a great topping on tacos and sandwiches! The crunchiness of the slaw is very satisfying and it is perfect for hot summer days. Our Vegan Jicama Slaw is oil free. So it’s healthy, delicious and crazy easy to make! It takes about 15 minutes to make with a food processor.
What is Jicama?
Not everyone is familiar with jicama. It is a root veggie with a thin skin. They are very low calorie and high in fiber. They are often eaten raw. We like to slice them up and dip in salsa or vegan cheese dip for a healthy snack. Jicama is juicy and crunch. It has a very light flavor that is slightly sweet slightly nutty. The texture is similar to a water chestnut or maybe a radish.
Vegan Jicama Slaw
Ingredients
- 1 Jicama
- 1 Carrot
- 1 Lime
- 1/4 cup Cilantro chopped
- 1 dash Salt and Pepper
Instructions

Peel the jicama and carrot. Cut in to pieces that fit your food processor.

Use your food processor to shred the jicama and carrot.

Then mix in the juice from one lime, 1/4 chopped cilantro, and a dash of salt and pepper.
