Vegan Carrot Salad
This recipe for Vegan Carrot Salad is simple and straightforward because I wanted to let the sweetness of the carrots shine through. There are only five ingredients and it is pretty quick to whip up. If you have a food processor with a shredder function it should take less than ten minutes to make this yummy raw vegan carrot salad. If you don’t have a food processor you can still make it by using a box grater to shred the carrots but it will take a little more time.
Vegan Carrot Salad
Ingredients
- 3 large carrots
- 1/2 cup chopped pecans
- 1/2 cup dried cranberries
- 1/4 tsp salt
- 1/4 cup vegan mayonnaise such as Just Mayo
Instructions

Use the shredder function of your food processor to grate three carrots. This should yield three cups of shredded carrots. If you don't have a food processor you can do this by hand with a box grater but it will just take longer.

Mix the grated carrots with 1/2 cup chopped pecans, 1/2 cup dried cranberries, and 1/4 cup of vegan mayo. Mix well and add salt to taste.
