Old Bay Roasted Pumpkin Seeds
Did you ever roast pumpkin seeds as a kid? This was something we always did at our house when we carved jack-o-lanterns for Halloween. Pumpkin seeds make a fun healthy snack. They are a good source of protein and iron. To add a grown up twist to this treat you can add seasoning when you roast the seeds. Any spice mix you like will work. Old Bay Roasted Pumpkin Seeds
Ingredients
- 1 pumpkin
- coconut oil
- Old Bay Seasoning

Cut the top off your pumpkin. Scoop out the guts and seeds. Separate the seeds from the pulp. Use a colander to rinse the seeds.

Lay the seeds out to dry on a towel. When the seeds are dry add them to a mixing bowl.

Spray the seeds with coconut oil and generously sprinkle with Old Bay Seasoning. Mix well to coat the seeds.

pre-heat the oven to 200. Spread the seeds evenly on a baking sheet covered with parchment paper. Bake the pumpkin seeds for 45 minutes. Stir the seeds once or twice while baking.
