End of Summer Stone Fruit Salad
I have a love/hate relationship with summer so I have mixed emotions about the end of summer. I love the making trips to the local farmers market and the abundance of seasonal fruits and veggies but I hate the heat and humidity. For many people Labor Day marks the end of summer. It’s the last excuse to throw a great summer bash. I love any excuse to feed people I love. This salad was inspired by that spirit. A stone fruit is any fruit with a “pit” inside. Get creative and use any stone fruit you like. I used cherries, plums, and nectarines but peaches would also be amazing in this. This stone fruit salad is so colorful and bursting with the flavor of the season.
Stone Fruit Salad

Ingredients
- 1 cup cherries
- 2 plums
- 2 nectarines
- 4 cups baby arugula
- 1 lemon juiced
- 1 orange juiced
- 2 tbsp avocado oil
- 1 tsp fresh thyme chopped
- 1 tsp fresh oregano chopped
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp hemp seeds
Instructions

To make the salad dressing start by juicing one lemon and one orange. This should yield about 1/4 cup of citrus juice. Whisk the citrus juice together with 2 tbsp of avocado oil, thyme, oregano, salt and pepper.

Pit the cherries and set to the side.

Cut the plums and nectarines in half. Remove the pits and slice the fruit into quarters or eighths. Set to the side with the cherries.

In a large mixing bowl dress your lettuce. Add all of the stone fruit and gently mix with the lettuce and dressing. Transfer the salad to your serving platter and sprinkle with hemp seeds to finish it with a nutty flavor.
