Road Trip Roundup

Home sweet home! We got home last night and I am so happy to not be in a car right now. We had a great road trip but I am feeling exhausted. Our last day in the park we got up early went back to Sprague Lake and we spotted this guy walking across the lake.

We left Colorado early friday morning and drove a little less than half way home. We stopped in for the night in Kansas City. We had dinner at Cafe Gratitude. This was our first visit there and the food was amazing. It was exactly what we needed after a long day on the road. We started with the Present bruschetta.

It was simple but crazy good. I loved the cashew cheese mozzarella. Eric ordered the Whole macrobiotic bowl but subbed carrots for the butternut squash.

He loves kim chee so when he saw that this bowl had homemade kim chee he was sold on the dish.  Cafe Gratitude has an amazing menu. With so many choices it took me a whiled to decide.  I ordered Extraordinary CLT sandwich. It was served open face with a cashew sauce, toasted coconut, lettuce, tomato and tasty guacamole.

I wish we had more time to spend in KC every time we have passed through we have had fun but we haven’t been able to stay long enough to check out much of the city. I can’t wait to go back to Cafe Gratitude again someday.

Saturday was a really long day in the car. We slept in a little later than we should have because we were out having fun the night before. KC to Bham is about an 11 hour drive. We pushed hard to get home and didn’t stop much. One thing we did see on the drive home yesterday was convoys of power company trucks from Kansas, Missouri, and Illinois heading south to Florida to help restore power after the storm. It was nice to see other communities sending support but made me worry about family and friends in Hurricane Irma’s path. Sending positive thoughts and vibes to Florida.

Update from the last post. Eric got a better shot of the Marmot on the rock with the real camera. So here is my proof that it does exist.
