Vegan Pizza Two Ways

Pizza is my favorite! Seriously I could eat it every day. When I spotted vegan pizza crusts at my local Publix (they stock them with the pita bread in the deli area) grocery store I had to try them. Brooklyn Bred pizza crusts are amazing! They are so yummy and easy to bake. Two crusts come in each package so we wanted to make Vegan Pizza Two Ways. The first pizza is Grilled Broccoli and Red Onion and the second is a Hawaiian style Pineapple Chutney pizza with sun dried tomatoes and black olives.

Grilled Broccoli is so good y’all! We sprinkled the broccoli with nooch and other spices before grilling it and it’s just delicious. I still can’t decide which pizza I liked better. Hawaiian style pizza is our normal go to pizza. The Pineapple chutney is salty and good. It pares really well with the chewy smoked sun dried tomato.

Pineapple Chutney Vegan Pizza

We responsibly enjoyed our homemade pizzas with beer from Eric’s favorite local Birmingham brewery, Trim Tab. If you are in town you need to check out their brewery. You never know what they will have on tap. They do a lot of seasonal small batch brews. Some of their beers they can and some they don’t thus the need to stop by the brewery. If you are into beer be sure to check out Eric’s Instagram account HopSouth he posts all beer but mainly IPAs.

Ingredients

  • 1 package Brooklyn Bred Pizza Crusts Two crusts per package
  • 1 cup pizza sauce
  • 2 cups vegan mozzarella style cheese shredded

For the Grilled Broccoli Pizza

  • 1 head broccoli
  • 1/2 red onion sliced
  • 1/4 cup olive oil
  • 1 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper

For the Hawaiian Style Pineapple Pizza

  • 1/4 cup Pineapple Chutney See Recipe Notes for link
  • 1/4 cup smoked sun dried tomatoes
  • 1/4 cup sliced black olives

Instructions

For the Grilled Broccoli Pizza

  1. Trim the head of broccoli into large spears. Toss the broccoli with olive oil, nutritional yeast, garlic powder, salt, and pepper to evenly coat.

  2. Pre-heat your grill to medium. Add the broccoli and red onion slices to the grill. Close the lid and grill for 15 to 20 minutes, turning once to evenly cook both sides. The onion typically needs more time than the broccoli so you may need to start it first or pull the broccoli off the grill earlier so it doesn’t burn.

  3. After you have grilled your veggies you can cut them in to smaller bit size chunks. Then set aside to layer on top of your pizza.

For Both Pizzas

  1. Brush the crusts with a little olive oil, then top with 1/2 cup pizza sauce and 1 cup of vegan cheese shreds. Add your pizza toppings (First pizza grilled broccoli and onion; Second pizza pineapple chutney, sun dried tomato, black olives). Then bake according to the crust packaging 8 to 12 minutes.

Recipe Notes

Here is the link for the Pineapple Chutney recipe. Crushed pineapple will work but this easy to make chutney adds another layer of flavor!
