Buffalo Seitan Salad
You know I love a good salad. Too many people think salad is just lettuce on a plate but it is so much more than than that. A good salad should have layers of flavor and texture. So today I present to you my Buffalo Seitan Salad. We make a batch of basic seitan almost weekly. It has just become part of our weekly meal prep on Sundays. We don’t always have a meal planned for it but Eric always takes his lunch to work so we like to have it around for his lunches. Today we had a little extra so I turned it into buffalo seitan salad.
Buffalo Seitan Salad
Ingredients
- 3 cups arugula lettuce
- 2 cups pre-baked seitan cut into cubes
- 1/3 cup buffalo sauce
- 1/2 cup carrots shredded
- 1 tbsp hemp seeds
- Your favorite vegan ranch salad dressing
Instructions

Cut your seitan into bite size cubes and toss in a bowl with 1/3 cup of buffalo sauce to completely coat. Set the seitan to the side.

Wash and prep the lettuce and carrots. I like to shred or grate the carrots in the food processor but this can be done by hand with a box grater or vegetable peeler. Toss the lettuce and the shredded carrots together in a large serving bowl.

Top with the buffalo seitan. Drizzle any extra buffalo sauce on top. Sprinkle a tablespoon of hemp seeds over the top of the salad. Serve with your favorite vegan ranch salad dressing.
Recipe Notes
This is the recipe we use for the pre-baked seitan but you can use store bought as well.
