Vegan Beet Steaks

Steak night, Date night! When we want to have a nice meal without a lot of fuss we make vegan beet steaks. We call it steak night because this is as close as we are getting to a steak house dinner. Vegan beet steaks are super easy to cook on the grill. I love this no hassle dinner. We make the beet steaks and serve them with a simple salad. Might also serve them with a baked potato, bread, and some good red wine.

To make Vegan Beet Steaks you need:

  • Red Beets (one beet per person)
  • Olive oil
  • One medium onion cut in half and sliced
  • 8oz sliced mushrooms
  • 1/4 cup red wine
  • 1 tbsp vegan butter
  • fresh thyme
  • fresh oregano
  • salt and pepper

Start by washing and peeling your beets. Cut them into slices that are about 1/4 of an inch thick. These are your beet steaks. Add the beets to a mixing bowl and drizzle a little olive oil over them. Toss the beets in the oil then season well with salt and pepper. Pre-heat your grill. You want to cook the vegan beet steaks over medium heat (around 400 if your grill has a gage). Grill the beets with the lid of the grill down for about 5 to 7 minutes. Flip the beet steaks and grill on the other side for another 5 to 7 minutes.

While the beets are on the grill heat vegan butter in a pan. Add the onions and mushrooms and cook until golden brown. Season with salt and pepper. Add the fresh herbs to the onions and mushrooms when they are almost done. Finish by deglazing the pan with red wine. Allow the wine to reduce. Serve the onions and mushrooms on top of the vegan beet steaks.
