Monthly Update

Hello May!

Goodbye April, Hello May! I hate the heat and humidity of Southern Summers.  So I have been trying to soak in as much of this nice Spring weather as possible before Summer hits full force. I love spending time outside even if it is just in my back yard. We have been doing a lot of vegan grilling. What is your favorite veggie to grill? Have you tried grilling strawberries or other fruit?

At the beginning of April we drove up to Nashville for a quick weekend trip. We went to Nashville Vegfest at the Fairgrounds. It was so crowded! It was truly cool to see so many like minded vegetarians and vegans all in one place. They had speakers and cooking demos but the main part of Vegfest was walking around and checking out all the different vendors and sampling.

After Vegfest we ate at Avo which is an amazing vegan restaurant. We split a couple of things so we could try more of the menu. I always for the cheese board! I love fresh vegan cheese. We also ordered kimchi spring rolls and rainbow sushi.

This past month I am also excited to say I am fully back on the yoga wagon. It feels great to be practicing again consistently. I even made it to two different free outdoor community classes in April. I love finding new yoga classes to try out! Community classes are great because it exposes you to different styles of yoga. No two yoga teachers are the same so if you try one and don’t like it keep trying until you find the right class for you. It is amazing what you can find if you poke around on Facebook and Eventbrite.  There are tons of free (or almost free $5-$10 donation) classes out there.  Breweries and beer stores often host classes. One of the free classes I went to was on the back patio of a beer store near my house. The yoga class I went to last night was hosted by a local shopping center that uses a small court yard near the shops.

Hello May - Vegetarian South

Yes! Please stop raining so I can go outside and play. This past weekend we worked out in the yard. We cleaned up and replanted our container garden. We planted a bunch of herbs and tomatoes. I am also trying something new this year. We planted a couple varieties of edible flower from seed packets. Hopefully my seed will sprout soon. Keep your fingers crossed.

What do you have planned for May? I don’t have much planned yet. We will see where the wind takes us. I would like to get some hiking in or maybe a weekend beach trip?
